We source our specialty-grade beans from high-elevation estates where the cherries develop a dense, resilient structure. Our roasting process is a disciplined "First-Light" craft utilizing small-batch thermal mapping to eliminate the bitter "char" of mass production while unlocking clean, vibrant notes of honeycomb, toasted almond, and stone fruit.
